Squaddle’s Guide to the Best Summer Cocktail Bars in Australia

Feeling hot, hot, hot? With the steamy weather settling in for the season, it comes as no surprise that Australians are flocking in droves after-five to their nearest cocktail bar. So, in preparation of the endless summer before us (sorry Melbourne) we’ve popped together a list of our favourite cocktails spots around the country. Bottoms up!

PERTH

Enrique’s School For To Bullfighting | Highgate

Sure the name is a little silly, but if there’s one thing they take very seriously it’s their dedication to all things gin. Our personal favourite for summer? Try their Beefeater gin with watermelon juice and mint. Ole!

Bobeche | St Georges Terrace

Take a delightful stumble down a rabbit hole into a basement bar that’s one part Alice in Wonderland and one part Alice Cooper. Nestled in a (airconditioned!) basement below the city streets, we just know you’re going to love the selection of eclectic mix of cocktails served in dainty teapots.

Hula Bula Bar | Victoria Avenue

Hula Bula Bar, Perth’s first ever rum bar, is a tiki bar with a whole lot of attitude. It’s kitsch, it’s catchy but most importantly it serves up an outrageous array of flaming cocktails in ironic carved icons.

SYDNEY:

This Must Be The Place | Darlinghurst

Does the thought of yet another season of Aperol Spritzes leave a bad taste in your mouth? Looking for a cocktail bar that offer a little more variety? Then, This Must Be The Place for you. Featuring an extensive cocktail offering with no fewer than four kinds of spritzes – including a delightful strawberry, watermelon and rosewater confection that will leave you feeling fresh – this gem is our top pick for summer.

Opera Bar | Opera House

Sure it’s an oldie but, just like a fine wine,Opera Bar continues to get better with age. Lounge by two icons of Australian culture and soak up the spectacular views as you indulge in signature cocktails like the Sydney Sling.

PS40 | King Street

When the sidewalk becomes hot enough to fry an egg on, there’s only one solution. Slip out of those sweaty clothes and into a dry martini. Or in this case slip in a selection of carefully crafted cocktails at PS40. Our top tipple? We can’t go past their house smoked lemonade with a shot of whisky.

BRISBANE:

Pool Terrace Bar at Next Hotel | Queen Street Mall

Leave your cares (and your sweaty peers) at the lobby and head straight up to the refreshing atmosphere of Next Hotel’s Pool Terrace. Featuring ice cold cocktails, panoramic views of Brisbane’s most bustling shopping district and a seriously Insta-worthy courtesy of their sparkling swimming pool, it’s got your summer wish list sorted.

Sunset Spritz Pop-Up | Customs House

Riverside cocktails with a serious side of glamour? You simply can’t go past the appeal of this iconic Brisbane landmark. Customs House is once again rolling out the red carpet summer event of the season with their popular Sunset Spritz pop-up bar returning for another year. It’s the fancy way to sweat the afternoon away.

Gerard’s Bar | James Street

If you’re lucky enough to live in the Sunshine State you’ll appreciate that when it comes to grabbing reprieve from the heat, sometimes it just can’t be done without sweet, sweet, air conditioning. So if you’re going to lock yourself indoors with something cold, at least do it in the glamorous surrounds of Gerard’s Bar. But, while you’re there be sure to try their Fino, grapefruit and basil concoction – it’s 10/10 refreshing.
